Cinnamon Sugar Lovinnn'



So yesterday, I was really craving some apple pie, but of course that food is a no-no. Instead, I decided to make cinnamon-sugar chicken baked with rasberries, blueberries, and apples. I also satueed some carrots and tomatos in a little bit of olive oil to get some veggies in there. And the picture above is how it turned out! To make it, I basically rubbed the chicken down with a cinnamon and sugar mixture and tossed the fruit with the same mixture and some butter. Then, I just baked them in a pan together for about 30 minutes. For the veggies, I simply put a dash of olive oil in a frying pan and then threw in the tomatos and carrots with salt and pepper. The veggies turned out well, but I make them like that all the time. The chicken was tender and juicy, but not alot of the cinnamon flavor was absorbed. But the fruit added alot of flavor to the chicken, and overall I was pretty satisfied with my meal!

This is my first blog, and I admit I feel a little weird just writing to no one. But I'll try it out!

So as of about 2 weeks ago, my doctor told me I have to stay on a gluten free diet. Forever. I'm still trying to figure out exactly what foods I can and cannot eat, so if anyone has suggestions, please let me know! I'm on a college student's budget, so nothing too expensive. Anyway, I created this blog to help me keep track of what I eat and so other people can enjoy cheap, gluten-free food too!
